The only thing you have to keep in mind before making it, is that you need to soak the cashews for around 2 hours beforehand. Cover them in water and let them sit and you're good to go with the rest.

Caesar Salad Dressing
1 ¼ cup water
2/3 cup extra virgin olive oil
3 tbsp lemon juice (fresh squeezed)
1 cup cashews, soaked (2 to 4 hours)
6 or 7 garlic cloves
1 tsp Dijon mustard
1 tsp sea salt
½ tsp fresh ground pepper
Pinch of cayenne pepper
Slivered raw almonds for topping
Makes 3 cups of dressing
Store for 1 week in a mason jar or airtight container.
4 heads romaine lettuce, chopped
**You can use kale as well or even pre-packaged greens if you’re time crunched
Place all of the dressing ingredients into your blender and blend until smooth.
Toss the romaine lettuce with 2 cups of Caesar dressing.
Divide into 6 dishes and top with slivered almonds.
